Muffin Mondays | White Chocolate Macadamia Nut Muffins

Lately I’ve been craving white chocolate macadamia nut cookies, in a bad way. I don’t know what started this craving, but it has been all I can think of.  When I was younger they were my favorite cookie. In fact the only cookie I really liked. As a special treat my mom would by them for me from The San Francisco Cookie Company in the mall. They were always warm and fresh. Soft medium rare center and crispy buttery edges. These cookies make me swoon.

To satisfy my cookie craving I decided to bake muffins. Doesn’t seem to make sense but it does. I baked white chocolate macadamia nut muffins and they tasted just like the cookies. Cookies muffinized! The center of the muffin was a touch gooey, the edges were crispy, the white chocolate melty, the macadamia nuts warm and tender. It was delectable. Craving satisfied in muffin form.

Muffin Mondays | Plum Muffins

When I wake up in the morning I’m starving. Does this happen to you too? I mean stomach growling, need to feast, starving. That and I’m tired. I never wake up not tired. Does this happen to you too? So when I finally stumble into the kitchen I just want to eat. Muffins aren’t always the best solution, sometimes toast is a better option, but muffins just taste so much better!

So tired and hungry I bring you Plum Muffins. One bowl for dry ingredients that you can gather while your butter and sugar are creaming in the mixer. Fold in the dry ingredients and sour cream then the juicy plums. The batter begins to get lucious streaks of red from the plum skin. The whole mixture has an incredible vanilla and stone fruit perfume. The muffins are suple and sweet. They satisfy my morning hunger.

Muffin Mondays | Peach Shortcake Muffins

Peaches check. Shortcake check. Muffinized yes! The glorious beauty of summer stone fruits, in this case ripe juicy peaches, stuffed into crumbly shortcake all tucked into a muffin form. Break them open hot out of the oven and slather them with fresh whipped cream and more fresh peaches, I mean what can be better? Enjoy these on the patio in the warm summer sunshine. Happiness.

I am so obsessed with summer stone fruits and want anything plum, peach or nectarine. Throwing them into my favorite baked goods only extends the pleasure. These muffins take no time to whip up. Butter is cut into the flour creating a biscuit like texture. The fragrant sweet peaches add umph to the dough. The whole thing is just lovely I tell ya!

Muffin Mondays | Cherry Sour Cream Muffins

Cherry sour cream muffins. Juicy, sweet, nutty. The sour cream gives them a richness that almost tastes like cheesecake. The muffin is loaded with ripe cherries that bleed sweet fruit juice with each bite. I used half almond meal and half flour to create a light crumbly texture that is buttery and luscious.

I topped a few with a brown sugar almond meal crumble, I topped some with toasted sliced almonds and the others I left simple and unadorned. I loved the varitety.

Muffin Mondays | The Perfect Banana Muffin

Banana muffins may just be my favorite muffins. They never disaapoint. Even the worst banana muffin is still better than the average blueberry muffin. Did that make sense? You know when you’re starving so you go into your local Starbucks or Coffee Bean and you look at all the sad pastries sitting in the case, but then your stomach growls and you’re forced to choose one for hunger’s sake? They always disappoint me – too oily or dry or worse yet, stale and cold. But something about bananas in muffin form keep things springy and fresh even in those sad coffee shop pastry cases.

This banana muffin is my go to recipe. It is easy to whip up and never goes wrong. The resulting muffins are light and jam packed with juicy gooey bananas. There is a hint of coffee, a splash of rum and a big scoop of sour cream. Just be carefull, these muffins hot out of the oven are so fragrant and tasty you may just want to eat the whole dozen in one sitting. It really is the BEST banana muffin/bread recipe out there!

Muffin Mondays | Ginger Aprium Muffins

Are you as excited about stone fruit season as I am? I get so excited when I see apricots, plums, nectarines and peaches appear at the farmers market. Nectarines are by far my favorite stone fruit, but I have recently grown to love apricots. Especially apriums. Have you had an aprium? I hadn’t either until last weekend, but since the first bite I’ve been desperately craving these plum apricot hybrids. They are ¾ apricot ¼ plum with a nice honey sweetness.

Inspired by my farmer’s market finds I bring you Ginger Aprium muffins. They are bursting with apriums and singing with ginger heat and sweetness. Honey rounds out all of the flavors. These muffins are sweet, juicy and tender. They scream summer. Perfect when enjoyed in the sunshine.

Muffin Mondays | Buttermilk Spiced Doughnut Muffins

Buttermilk spiced doughnut muffins with a coffee buttercream on the side for dipping. Yeah I did that.

Tender, crumbly and loaded with fragrant spices, these are cake doughnuts disguised as muffins. They remind me of Hostess mini spiced crumb doughnuts I used to eat as a kid. Do you remember those? They had the powdered sugar version too. About 8 to a package, I could devour those little puppies within seconds. My five year old self would be really proud of these muffins.

I used hazelnut meal with flour for these doughnut muffins which gave an added airiness to the dough. There is no real hazelnut flavor more just a texture. The doughnut muffins is brushed with melted butter (oh yeah!) and then rolled in a mix of cinnamon, nutmeg and a hint of ginger for added zing. I made a little coffee buttercream for dipping or smearing giving the muffins a little added creamy sweetness. Coffee flavored butter paired with doughnut muffins – a match made in heaven.

Muffin Mondays | Oatmeal Cookie Muffins

Well it is Monday again. I hope you’re week is off to a good start. You know what would make it even better? It would be even better if you were eating an oatmeal cookie muffin with an ice-cold glass of milk. Right? Cookies and milk are great, but cookies in a cute and tasty breakfast package are more my style. So I took my favorite oatmeal cookies raisins nuts and all and muffinized it. I sprinkled a generous amount of brown sugar over the top before baking to create a nice crispy edge to the muffin reminiscent of a cookie. Rolled oats, buttermilk, dark brown sugar and butter melt together to create a spongy soft muffin. Bursts of juicy sweetness come from the raisins and a nice crunch from a mix of toasted almonds and walnuts. I added a hint of cinnamon to round it all out. They really do taste just like an oatmeal raisin cookie only fluffier. Cookies for breakfast; it’s a good idea!

Muffin Mondays | Green Chile Cheddar Corn Muffins

It is a rare moment when my sweet tooth isn’t in full force, but sometimes I want something savory in the morning. When I get these cravings for salty not sweet a good savory pastry or muffin paired with some crispy bacon or sausange is just the ticket.

If you follow me on Instagram (I’m obsessed!) you may have noticed that I am always at Short Cake Bakery. I kinda love it, A LOT. Today’s muffin is inspired by one of Short Cake’s savorying morning pastry options – Green Chile Cheddar Muffins. A little sweetness from the corn, a little smokiness from the hatch chile, all of which is hugged together by the melty sharp cheddar cheese. Pair these muffins with some sausage links or a veggie hash with bacon and you have a perfect savory breakfast. Best part, you can enjoy your leftover muffins with some chili for lunch or dinner.

Muffin Mondays | Brown Butter Hazelnut Raspberry Muffins

This muffin Monday is brought to you by hazelnuts, brown butter and raspberries. Do you like all of these things? I hope you do because they like you! I had left over hazelnut meal from my previous Hazelnut Apple muffins but have not found a good reason to use it again until today. I used half AP flour and half hazelnut meal in these muffins and the nutty crumbly texture was incredible. I also used browned butter rather than regular old melted butter because brown butter makes everything better this is a fact. I love how the raspberries just melt into the batter when baked. The best part of these muffins is the sugar-crusted tops. Hot out of the oven the sugar tops crack like a crème brulee. These muffins are sweetness all around with a delicate tartness from the raspberries.

I am currently enjoying this beautiful spring morning eating these nutty, buttery muffins with a cup of tea while watching the newly hatched doves in my back yard. Muffins in the morning… the only way to start the day!
