Tart yet sweet, blueberry mint lemonade ice pops are a refreshing summer treat. I have been lucky enough to have a continuous abundance of delicious blueberries stocked in my fridge all summer long. They have turned into fantastic tarts, fluffy muffins and now ice cold treats. The blueberries help to balance out the sour punch from the lemon juice while the mint provides an aromatic freshness to the lemonade. This recipe is simple to make and provides a nice base for an array of flavor variations.  The popsicles were slightly sticky sweet with a nice flaky icy bite.  When it is scorching hot out these are the perfect summer refreshments!


Blueberry Mint Lemonade Ice Pops

makes 8 popsicles

1 cup fresh squeezed lemon juice (3-4 large lemons)

1 cup fresh blueberries

3/4 cup sugar

4 cups water (1 cup of water to add to sugar for simple syrup)

1/2 bunch fresh mint leaves

Place the blueberries in a blender or mixer and puree. Place sugar, mint leaves and one cup of water in a medium sauce pan and bring to a boil. Stir so the sugar disolves. Let boil for a few minutes then take off heat and let the simple syrup cool while you prepare the other ingredients.  Place the blueberries in a blender or mixer and puree. Place lemon juice and add the cooled mint simple syrup. Next strain the pureed blueberries through a medium sieve into the pitcher. Add 2-3 cups of cold water to taste. Pour into popsicle mold and place in freezer at least over night. Enjoy!
